Next to Thermaikos gulf, in the fertile lands of Kalochori, the Tsipitsoudis family has been cultivating rice for 25 years. All arable soils have their special characteristics. Their soil has increased salinity, due to the fact that Kalochori is 1 meter below sea level.
Arborio has a pearly, round grain, which forms the basis for risotto. Like Carnaroli, it is a rice ideal for risotto, characterized by high absorbency and a firm, but "sticky" texture.
