Organic farmer Alexandros Lieberopoulos takes care of the Xotari estate in Kea, where the soils are shallow, plowing is done with mules and irrigation is impossible. In addition to dried almonds, medicinal plants such as oregano, thyme, balsam herb (swordweed), rosemary, etc. are grown or harvested on the property.
Keas almonds are a traditional crop being revived on the Xotari Estate. Almonds such as long-stalks, nightshades, round-shells, small-shells, large-shells, elephant-shells, short-shells, medium-shells and small-shells. Rare almonds with special characteristics, not found elsewhere in Greece in production. It is an organic, terrestrial cultivation and the almonds are unprocessed, uncooked and inhaled with a unique, slightly bitter taste.
